Ingredients

2 tbsp canola oil
750 grams of boiled chick peas (Approx 2 - 15 oz cans)
5 medium tomatoes, roughly chopped
2 medium onions, halved and sliced
2 tsp fresh ginger, crushed
5 cloves garlic, crushed
1 can tomato paste
1 tsp salt (use less if using canned chick peas)
1 tsp ground coriander
1 tsp roasted cumin seeds
1/2 tsp red cayenne pepper
1/2 tsp turmeric
750 mL water (3 glasses)
Tips
Can be done in a slow cooker (approx 4 hours) or pressure cooker (approx 15 minutes).
Serve with a dollop of fresh yogurt and Basmati rice or chapati.
Directions
Chop onions and tomatoes. Crush garlic and ginger. Heat oil in a deep pan and lightly brown onions. Add in garlic and ginger paste. Saute. Next add spices and salt. Add a few table spoons of water to keep spices from sticking to the pan. Stir over heat for about 2 minutes. Add fresh tomatoes and cook until soft. Then add tomato paste and one glass of water. Allow the mixture to simmer for a few minutes while stirring. Add the chick peas, stir and cover. Cook over medium heat for about 30 minutes until the chick peas are very tender and the sauce has come together.
Serving Size: Make a large pot of stew. Approx 12 1-cup servings.
