Introduction

Pasta salad with bellpepper, cucumber, cheddar, dill adn yoghurt, perfect for lunch or as a side dish. Pasta salad with bellpepper, cucumber, cheddar, dill adn yoghurt, perfect for lunch or as a side dish.

Ingredients

    2 Cups of whole wheat pasta
    1 Cup of diced bell pepper
    0.75 Cup of diced cheddar
    2 Cups of low-fat yogurt
    1 Cup of dill sprigs
    1 Cucumber diced
    Juice from half a lemon
    Salt and pepper to taste

Directions

1. Cook pasta and let it cool
2. Meanwhile cut up bellpeppers, cucumber, cheddar.
3. Put yogurt in a large bowl add dill, lemon juice and salt & pepper to taste.
4. When pasta has cooled off add it to the bowl of yogurt along with the diced vegetables and cheddar.
5. Mix it all up and serve.



Serving Size: makes about 8 1-cup servings
