Introduction
This is so rich, and at only 99 cals a serving, it's heaven! I love to pair it with fresh strawberries and eat it warm and gooey. Chilled with fresh fruit is also a treat! Ingredients

3/4 c. White Rice (I use 5 min rice)
1/3 c. Sugar or Sugar substitute
2 c. milk, 2%
1 tbsp light butter or butter sub.
1/4 tsp salt
1 large egg white
nutmeg (to taste)
cinnamon (to taste)
1 tsp vanilla extract
Directions
1. FOR MIN RICE: Follow microwave or stove top instructions on box. (I follow microwave instructions.)
FOR NORMAL RICE: Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.
2. In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla.
Serving Size: makes roughly 6 servings, 1/4 c. each.

This recipe seems to make about 3 cups of pudding yet it say 6 servings of 1/4 cup each. It says add raisins yet there are no raisins listed in the ingredients. Raisins will definitely add to the calories and if it makes 6 half cup servngs that changes everything. Please double check recipes - 4/26/20
