Ingredients

    4 bone-in skinless chicken thighs
    1/4 cup lime juice
    1 1/2 cups chicken broth
    2 cloves garlic, finely chopped
    1/2 teaspoon dried thyme leaves
    1/4 teaspoon pepper
    2 tablespoons butter or margerine
    1 cup uncooked instant brown rice

Tips

I've noticed that the rice doesn't cook fully within this time frame, so I tend to give it 20-30 minutes and turn the slow cooker to High heat setting.

Play around with it and do what works best for you! (if using white instant rice, it'll probably cook within the 15 minutes).


Directions

1. Spray 4-quart slow cooker with cooking spray. Add chicken and ramaining ingredients except rice.

2. Cover; cook on Low heat setting 8-10 hours or until juice of chicken is clear when thickest part is cut to bone (180 F). During last 15 minutes of cooking, stir in rice.

3. Remove chicken from slow cooker. Place cooked rice on each serving plate; top with chicken. Spoon any remaining juices over chicken.
