A great low cal lunch option. Use any 3 veggies (or more) of your choice and pair them with roasted chicken and any bean of your choice. Ingredients

    1/4 roasted chicken, skin and bones removed
    2 cups sweet potato, cubed
    1 cup frozen green beans
    2 cups eggplant, cubed
    3 cups Great Northern Beans, cooked
    2 cups low-sodium chicken broth
    Seasonings to taste

Directions

Combine all items in slow cooker. Cook on low 6-10 hours.
