Ingredients

1 medium onion, diced
1 pound fresh spinach
1 TBSP olive oil
1 clove garlic
Herbs, salt, pepper
5 eggs
2 cups Cottage Cheese (lowfat)
Tips
Quick and easy, this recipe may be used as a lower-fat alternative to quiche as a main course at brunch or as a delicious side. Pairs well with a savory tomato / caper/ olive relish or a light green salad, particularly when made with peppery or savory lettuces. Cook until well done. This recipe will tolerate over-cooking well as the spinach and onion remain moist. I've had it in the oven for an hour with little ill effect - the top browns adding a delicious caramelized flavor.
Directions
Preheat oven to 350
Heat the oil and saute the onion until translucent. Add garlic, spices, and S&P
To same pan, add spinach and wilt. Drain liquid.
Combine eggs, cottage cheese, and spinach mixture and pour into a lightly oiled 9x13 pan.
Cook until firm, about 35-40 minutes
Serving Size: Makes 4 hearty portions as main dish or 6-8 as a side
