Introduction

Ingredients

    2 c. flour
    1 tsp. soda
    1/2 tsp salt
    1/2 c. applesauce
    1/2 c. splenda with sugar blend
    2 eggs
    1 tsp vanilla
    4 bananas

Tips

1. I freeze my bananas when they get too ripe to eat. When I make banana muffins, I simply put them in the microwave for 1 minute, cut the tops off the banana and squeeze the banana out directly into my mixing bowl. Because the banana is already softened, there is no need to mash beforehand.
2. It is import to fold in the dry ingredients. It produces a better muffin with a great texture.
3. I didn't have enough eggs to just use egg whites. If you choose to use just egg whites making even more healthy, use four egg whites instead of 2 whole eggs.


Directions

Sift flour, soda, and salt. Mix applesauce and sugar in your kitchenaid mixer. Add eggs and vanilla. Blend until thoroughly mixed. Mix in mashed bananas. Fold in dry ingredients. Scoop dough into greased muffin tins. Bake at 350 for 15 or until golden brown.
