Ingredients

    1/2c soya margarine
    1c brown sugar
    1 egg white
    1c almond milk
    1 tsp Vanilla
    2c white flour
    1 tsp Baking Soda
    2 1/2c chopped rhubarb

    TOPPING

    1/4c brown sugar
    1 tsp cinnamon

Directions

Preheat oven to 350 F.
Cream together first 2 ingred.
Add egg, milk and vanilla. Mix well.
Add flour, baking soda & rhubarb. Mix altogether.
Pour into baking pan.
Sprinkle with topping.
Bake 40 - 50 min
