Ingredients

1 c raisins
1/4 c rum
1/4 c unsweetened applesauce
3/4 brown sugar
1 egg
1 tsp vanilla extract
1/2 c low fat sour cream
1 1/2 whole wheat flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/2 c oats
Directions
Combine the raisins, water and rum in a small saucepan. Bring to a boil, then reduce to simmer. Simmer until the raisins are plump and the liquid has evaporated. Allow to cool completely.
Preheat the oven to 350F. Spray cookie sheets with nonstick cooking spray; set aside.
In large bowl, beat applesauce and sugar until well combined (mixture should have the consistency of wet sand). beat in egg and vanilla until smooth.
In medium bowl, combine the flour through salt. Add half of the flour mixture to the sugar mixture. Gently stir in the raisins, cinnamon, oats, baking soda and sour cream. Add the remaining flour mixture, stirring just until blended.
Drop spoonfuls of dough 2 inches apart onto prepared cookie sheets. Bake in preheated oven for 12 to 15 minutes, until cookies are set but not yet golden. Allow to cool slightly on the pan before removing to a wire rack to cool completely. Makes 20 cookies. Serving size = 1 cookie.
