Ingredients

1 Red Pepper, sliced into strips
1 vidalia onion, sliced
12-15 cremini mushrooms, rinsed , stemmed and sliced
Tips
I make large amounts and use it over several days. It gives my meal some extra zest and makes it more filling. It can be used in many different dishes.
Directions
Spray non stick pan with Non Stick Spray (I use my misto with olive oil)
Add onion and cook stirring frequently, about 3 minutes. Add mushrooms, stir and let cook until mushrooms let there juices go. Add Peppers and saute another 5 minutes or until softened. Add any seasoning or spice you like and mix well.
Serving Size: 4- 1/4 cup servings
