High protein moderate carbs packed with vitamins....great for breakfast or pre workout, or post workout. Love this with my morning coffee and some sugar free syrup drizzled over it. Ingredients

    5 oz. sweet potato (already steamed)
    1/2 cup fat free cottage cheese
    1/3 cup oat flour
    1 cup liquid egg whites (best of the egg by Lucerne)
    pinch of baking powder
    pinches of splenda
    2.5 scoops Dymatize vanilla whey protein powder

Tips

I use a submersion blender to make the sweet potato and cottage cheese super smooth, blends it all up in about ten seconds! pour it into a pan and pop it in the oven. I cut them up and place individuals in plastic bags in the fridge for me and my dad to grab and go in the morning. delicious even when reheated in microwave!


Directions

I never have time to use separate bowls, so i toss all the ingredients into one bowl as fast as I can. You must microvave the sweet potato for about 4 minutes, then take the skin off and dump it into the ingredient bowl. Submersion blender it, or smash it all up with a fork and stir it up. pour into a bread loaf pan that has been sprayed with PAM. put into 350 degree oven for about 20 minutes or until top is golden and knife inserted come out clean!!

Serving Size: makes 4 mini loaf servings (cut loaf into four pieces)
