Introduction

Ingredients

    2 tbs Olive oil
    1 Large Onion, chopped
    1 large sweet potato, chopped into bite size pieces
    6 Yukon Gold(or other) Potatoes
    Water
    Curry powder, to taste.
    Salt to Taste

Directions

Put oil in skillet, chop onions and add to oil, heat over medium heat until onions are cooked through. Meanwhile chop sweet and gold potatoes into bite size pieces. Add to onions and saute for about 5 mins. Sprinkle on Curry powder then add water to cover potatoes about half way. turn down to low and simmer, stirring occastionally, until water is absorbed and potatoes are tender. add more water if needed.
