Introduction

Ingredients

    2 cans (7.5 oz each) salmon
    1/3 cup light mayo (I use the olive oil version)
    1 tbsp lemon juice (or 2 lemon wedges, squeezed)
    2 tsp Dijon mustard (or other of your choice)
    1/4 cup finely diced celery
    1/4 cup finely diced onion
    1/4 cup pickle relish, drained (I taste as I go and only add relish to my liking)
    Dash of black pepper


Tips


Also try whole wheat bread, lightly toasted. This will increase the carbs.


Directions

Mix all ingredients together.

Add cucumber slices and tomato, if desired and serve on lettuce leaves.
