This recipe was made using a 3.26 pound boneless, skinless pork tenderloin instead of the more traditional pork butt to reduce fat and improve the texture and flavor. Ingredients

    1/2 bottle (255 g) of Sweet Baby Ray's Barbecue Sauce
    3.26 Boneless, skinless pork tenderloin
    8 oz. can of diet Pepsi
    1 TBSP seasoned salt

Tips

This is great as a pulled pork sandwich (just add the calories for the roll), on top of a salad, or just by itself.


Directions

Pat pork tenderloin dry and put into a crockpot. Sprinkle 1-2 tbsp seasoned salt over top (this recipe used 1 tbsp in the calorie count) and then pour 1/2 bottle of Sweet Baby Ray's BBQ sauce over top. Pour 8 oz. can of Pepsi on top of that. Cover with lid, and cook on Low for 5-6 hours. Shred with a fork when done.

Serving Size: Makes twelve servings, each 1/2 cup.
