Introduction

Quick and easy dinner. Quick and easy dinner.
Number of Servings: 4

Ingredients

    4 fillets of cod (may be frozen)
    2 cans of diced tomatoes w/ basil, garlic, and oregano
    1 onion, sliced thin
    1 c. edamame (shelled)
    1 c. quinoa, cooked as directed


Tips

You can add fresh basil and oregano, if interested. Also, I add 1 T of chicken base to the water of the quinoa for a little extra flavor.


Directions

Start quinoa according to package directions. Saute the sliced onions until translucent. Add edamame and canned tomatoes. Lay 4 pieces of cod on top, cover and allow to simmer. Takes about 10-15 minutes, depending on if the fish is frozen. Serve 1/4 c of quinoa w/ filet on top, place 3/4 c of tomatoes and sauce on top.
