My favorite Mexican place has these to die for soft tacos. This recipe is the culmination of an epic journey to see if I could recreate them at home. I think I did pretty good, and I hope you think so as well! My favorite Mexican place has these to die for soft tacos. Ingredients

1 chicken breast
1 cup chicken stock
4 corn tortillas
1/2 cup of mexican beer (if no beer add more stock)
1 tbl Worcester sauce
1 tbl chipolte seasoning
1 tsp thyme
1 bay leaf
1 lime
1/2 cup onion minced
2clove garlic minced
handful of cilantro coarse chopped
Directions
Heat a stock pot over medium heat and bring 1garlic, beer and stock to a boil. Add the chicken, thyme, and bay leaf and cook until the chicken is cooked through (about 15 minutes). Take the chicken out and shred with a fork, the add the shredded chicken back into the broth. Then add the chipolte seasoning and the worcester sauce. Leave the lid off and let the broth reduce until the chicken makes a thick sauce.
While the chicken is cooking minced a clove of garlic, cilantro, onion and lime juice together for a onion relish. Heat 2 corn tortillas in the microwave for 20 seconds, top with chicken and onion and enjoy.
This recipe is great to multiple for a fast, healthy lunch or dinner. For every added chicken breast just add proportional amounts of stock and seasoning (1 breast=1 cup of stock). You could also add tomato or avocado for even more flavor and vitamins.
