Introduction

Can be made vegetarian easily, cooked up quickly and tasted delish. Even easy to make for a small dinner party. Can be made vegetarian easily, cooked up quickly and tasted delish. Even easy to make for a small dinner party.

Ingredients

    red bell pepper
    mushrooms
    arugula or spinach
    white beans
    turkey sausage
    marinara sauce
    mozzarella cheese
    romano cheese
    onions
    garlic

Tips

I added zucchini to the mix and it was wonderful.


Directions

broil lightly red peppers, while broiling to soften be sure to turn. Saute diced onion 3-4 minutes, add garlic, sauté 1-2 more minutes, add mushrooms and continue to sauté a minute or two more. Add spinach or arugla and a small squeeze of lemon juice and salt and pepper to taste. Once the spinach starts to wilt remove from heat and fold in the cheese and beans. Place into the peppers. Place the stuffed peppers in a baking dish with the one cup of sauce and allow to simmer for about 5 minutes. Enjoy.
