Ingredients

    8 bone-in or boneless pork chops (about 2.5 lbs.)
    1/3 C. brown sugar
    1/3 C. Ketchup
    1 bottle dark beer
    1 small onion sliced or 1/2 of a large
    1/4 C. water
    1 TBS. cornstarch
    salt and pepper
    1 TBS. Olive Oil

Tips

The darker the beer, the better the taste! I like to use Guinness. I also use the pork loin center cut boneless chops to reduce calories.


Directions

Season pork with salt and pepper. Brown pork chops in EVOO on both sides. Cook 3-4 at a time then remove to a plate and cover with foil while the others cook. Meanwhile, mix beer, ketchup, and brown sugar in a bowl and slice onions. When pork chops are done cooking pour mixture into the skillet along with the onions and place pork chops back in and make sure they get coated. Cover and simmer on medium low for 45 minutes making sure you rotate all the chops in the sauce. While simmering water and cornstarch together. When done, remove chops and add the cornstarch mixture and cook another minute to thicken. Serve over brown rice.
