Ingredients

    1 T. butter
    1/2 c. finely chopped onion
    3 cloves garlic
    4 c. coarsley chopped fresh spinach
    1 14oz. can artichoke hearts, drained & chopped
    1 8oz. package fat free cream cheese
    1/2 c. fat free mayonaise
    2 c. shredded reduced fat chedder cheese
    1/2 c. grated Parmesan cheese
    2 dashes hot pepper sauce
    1/4 c. finely chopped pecans

Directions

1) preheat oven to 350°F. In a med. saucepan, melt butter over med.-high heat. Add onion & garlic; cook 3 min. Add spinach; cook 3-5 min or until onion is tender and spinach is cooked, stirring frequently. Remove from heat.
2) Stir in chopped artichoke hearts, cream cheese, mayo, chedder cheese, parmesan cheese & hot pepper sauce. Transfer to an ungreased 1 1/2 qt. cassarole. Bake for 40 min.
3) Top with pecans. Bake for 10 more min.
Makes 4 cups
