Introduction

Hearty waffles, gluten free and low carb. Full of fiber! I tried them first with heavy cream instead of milk, but changing to milk did not change the carb content by much, and really reduced the fat!

Ingredients

    2 eggs
    1/3 cup 1% milk
    2 T. extra virgin olive oil
    1/4 cup sugar free pancake syrup, or sugar free vanilla coffee syrup
    1 t. vanilla extract
    1/4 cup coconut flour
    1/4 cup flaxseed meal
    1 1/2 t. baking powder
    1/2 t. salt

Tips

I use a Betty Crocker waffle iron that has two 4 inch square waffles per batch.


Directions

Preheat a waffle iron as directed.

Mix eggs, milk, olive oil, pancake or coffee syrup, and vanilla extract in a medium bowl using a wire whisk. Beat until the mixture is thickened and creamy. Add coconut flour, flaxseed meal, baking powder and salt. Let set for several minutes as the mixture will thicken.

Spray the waffle iron with non stick cooking spray and cook waffles according to the waffle iron directions using 1/4 cup-1/3 cup per waffle.

This also makes excellent pancakes.

Serving Size: Makes 4 4-inch square waffles

    These are awesome. I did get 5 four inch waffles out of my batter. I also used unsweetened coconut milk instead of the 1% milk you used. It lowered the carbs a bit. Thanks for an awesome recipe I can have on my low carb diet. - 3/1/15

    Tasty, tasty, tasty! I wanted sweet this AM & this hit the spot! Used the SF maple syrup option & could probably make a low carb McGriddle breakfast sandwich. Topped with berries! Yum! - 4/30/19
