Ingredients

3/4 cup of ground almonds
1 cup of desiccated coconut
1 cup of equal baking powder or splenda granulated sugar
1 medium sized egg
1 tsp vanilla essence
½ cup melted butter
2-4 Tablespoons of pure peanut butter (I used 4 Tbsp)
10g of unsweetend chocolate of your choice (I used GuyLian's No added sugar dark chocolate)
Tips
You should be able to get 20 cookies from this batch. If you make more, you're making the cookies too small. If less, you're making the cookies too big.
Directions
Preheat oven to 160 degrees celcius (320 degrees Fahrenheit)
Mix all ingredients except for the chocolate.
Crush the piece of chocolate into little choc chips (I crushed mine in a little plastic bag).
Add chocolate to the dough and mix well.
Using a teaspoon, Over fill it with dough and roll into small balls. Place the balls on your cooking tray. After you have put 20 balls on the tray, slightly put pressure on each one with a fork to flatten them a little (around 1½cm high).
Place in the oven and cook for 15-20mins
Serving Size: Makes 2½ inch pieces
