6 medium chicken thighs (with skin and bone)
3 potatoes, chunked
1 medium onion, chunked
3 carrots, chunked
3 celery stalks, chunked
1 1/2 Tablespoons dried sage
1 1/2 Tablespoons dried thyme
1 Tablespoon black pepper
1/2 Tablespoon coarse salt
Tips
Leave skin on for roasting, it adds flavor and keeps the chicken moist, but nutrition info counts on not eating it.
Directions
Rinse chicken and place in baking dish.
Add veggies (potatos, onion, carrots, celery) to baking dish.
Sprinkle everything with spices (sage, thyme, pepper, salt).
Roast on 375 for approximately 1 hour, or until chicken is slightly crispy and internal temperature reaches 165 degrees.
