Ingredients

Smoked Polska Kielbasa, 6 oz
Tiger Bay Easy Peel raw Shrimp, 1 lb
Quinoa, 1 cup
Organic Low Sodium Chicken Broth, 2 cups
Creole Seasoning, 4 tsp
Red Ripe Tomatoes, 1 cup, chopped or sliced
Green bell peppers chopped, ½ cup
Diced onions, ½ cup, chopped
Red bell pepper chopped, ½ cup
Garlic clove, 1
Organic Tomato Paste, 2 tbsp
Extra Virgin Olive Oil, 1 tbsp
Directions
1. Add oil to heated pan.
2. Add chopped galic clove, onion, peppers. Cook for about 4 minutes or until onions are clear.
3. Add sliced kielbasa and creole seasoning. Cook for another 3 minutes.
4. Add chopped tomato and tomato paste. Add chicken broth and stir until paste is disolved.
5. Add quinoa and cook for 6 minutes. Add shrimp and cook until the shrimp are completely pink and tender. About another 10 minutes.
