Introduction
This is a recipe that I found on Pinterest. Ingredients

1.5 lbs bonless skinless chicken thighs
2 cups fresh frozen corn
1 (15-oz) can black beans, drained & rinsed
1 (14.5-oz) can Rotel tomatoes and chiles
8 oz package cream cheese
Tips
This appealed to me because there is some good carbs, but also quite a protein punch. It's a very simple recipe and you could change the flavor and heat up by substituting salsa for the Rotel.
Directions
Put frozen chicken in the crock pot.
Put Cream cheese on top of the chicken.
Dump in the Black Beans (make sure they are drained & rinsed!!!)
Dump in the drained corn.
Dump in the Rotel.
Cover and cook 6-8 hours on LOW, stirring every couple hours. When cooked, turn off heat and allow to sit for 30-40 minutes to thicken. Serve over salad, rice or with tortilla chips, if desired.
