Number of Servings: 6


    1 lb. Ground Lean turkey meat
    1/2 C. whole wheat bread crumbs
    1 egg
    4 Tbsp Milled Flax Seed
    4 Tbsp Nutritional Yeast
    1 Onion Diced
    1 Green Pepper Diced
    1 Zucchini Whole
    1 Zucchinni Grated
    1 tsp garlic paste (to taste)
    1 tsp giner paste (to taste)
    1 tsp basil paste (to taste)
    1 tsp oregano

Preheat oven to 350 Degrees
Saute onions & pepper in oil spray of choice. Add grated zucchini and seasonings. If you'd like, you can add diced celery.
Take second zucchini and cut in half. Scoop out center section. (You might want to place in microwave and zap it until semi soft) Place sauteed veggies in the center section and then put back together. Don't worry about using all the sauteed veggies. They will be used in the meat.
Place meat in a bowl. Add bread crumbs, egg, flax seed, remaining sauteed veggies, nutritional yeast and seasonings to taste.
In a loaf pan, put half the meat mixture on the bottom of the pan, then place zucchini in the pan. Then cover the zucchini with the remaining mixture. Top with tomato sauce.
Bake for about 30 minutes.

Serving Size: 1/6 of loaf, 5 WW Points
