This is similar to dessert rice pudding, but less sweet. The addition of fruit makes it a satisfying, hearty breakfast that even the kids will love. Makes six 3/4 to 1-cup servings. Ingredients

    3 cups skim milk
    1 ½ cups water
    ¾ cup brown long-grain rice
    2 tbsp brown sugar
    1 large egg, beaten
    1 tsp vanilla extract
    1 tsp maple extract
    1 medium Macintosh apple, chopped

Directions

In large saucepan, combine milk, water, rice and sugar.
Bring rice to a boil over medium-high heat; reduce heat to medium and simmer, stirring occasionally, until rice is tender, about 40 minutes.
Remove 1/2 cup rice mixture and mix with egg.
Return to saucepan and add vanilla, maple and apple.
Serve warm.
