Ingredients

1 3/4 lbs cooked Potaoes (about 2 lbs raw)
8 oz Kosher Dill Pickles
7 oz Apple (red or golden Delicious)
5.5 oz raw Onion
fresh or dried Dill (1/2 bunch or 2 tbsp dry)
1/2 cup pickle juice
3-4 oz light Mayonnaise
Salt
1/2 tsp ground Mustard (or 1 tbsp Dijon mustard)
Tips
Dicing the potatoes before cooking makes less of a mess even if the pieces turned out to be slightly overcooked. The potato mash reduces the required amount of mayonnaise to make it a creamy mix.
The salad gets better the longer it sits (i.e. overnight in the fridge) but might need some extra mustard and salt the next day.
For a take-along picknic or lunch, slice up a hot dog and mix into the salad for a complete meal.

Peel potatoes and chop into bitesize pieces.
