Introduction

Ingredients

    2 eggs
    8 egg whites
    2 cups mushrooms
    1 cup fresh spinach
    cooking spray
    a tsp of each:
    salt
    pepper
    garlic powder

Tips

you could throw some cheese on top. I also like to add avacado and tomato as well.


Directions

In a bowl, whisk egg whites with the other 2 eggs, add garlic, salt, and pepper, set aside.

spray egg pan with cooking spray and turn to medium heat. cook sliced mushrooms until almost all the way cooked; add spinach until wilted.

pour egg mixture over the vegetables. Let it cook the bottom of the omelette and then start pushing the cooked part toward the middle, while letting the uncooked part begin to cook. Flip the omelette and let the other side cook.
