Introduction

Tastes just a good as when sugar is used but less calories and great for diabetics and those watching carbs. Also great for those who have lactose intolerance. Number of Servings: 6

Ingredients

    2 3/4 cups 2% Lactaid or 2% no lactose milk
    3 tbsp tapioca pearls (Minute Tapioca)
    1 egg lightly beaten
    1/3 cup Splenda or other preferred no-calorie sugar substitue
    1 tsp vanilla

Tips

Cover bowl(s) with plastic wrap to prevent a skin from forming on the top if you don't like the skin.
You can cut up fruit and serve on top of tapioca or serve it plain. I like strawberries and blueberries on mine.


Directions

1. Put all ingredients in a medium pot EXCEPT vanilla and let sit for 5 minutes.
2. Turn burner on medium and cook, stirring constantly, until it comes to a boil. Remove from heat.
3. Stir in vanilla
4. Pour into a large bowl or into 1/2 cup dessert cups and let cool to desired temperature.
5. Serve warm or cool. Be sure to refrigerate any uneated portions
