Ingredients

    Two ripe tomatoes, sliced
    4 tbs fresh basil, chopped
    1 ounce fat free feta cheese, crumbled

    2 tbs olive oil
    4 tbs balsamic vinegar
    1 tsp Splenda, or sugar
    salt to taste

Tips

This dish is best if you use vine ripened fresh tomatoes and do not refrigerate them.

You can add chopped garlic if you wish.


Directions

Slice the tomatoes and place on a platter, sprinkle the chopped basil and feta cheese on top.

Mix olive oil, balsamic vinegar, Splenda, and salt to taste.

Drizzle olive oil mixture over tomatoes and leave out to sit until mealtime.
