I LOVE Olive Garden's Zuppa Toscana - this recipe replaces the cream with 1% milk, the potatoes with white beans, and the Italian sausage is turkey sausage. Ingredients

    1 link turkey Italian sausage
    1 tsp crushed red peppers
    1 small diced red onion
    1 clove garlic, minced
    3 cups water
    2 cubes of chicken bouillon
    1/4 cup milk
    1 cup white beans, cooked
    ╝ of a bunch of kale, chopped

Directions

1. SautÚ Italian sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while you prepare other ingredients.
2. In the same pan, sautÚ onions and garlic over low-medium heat for approximately 15 mins. or until the onions are soft.
3. Add chicken bouillon and water to the pot and heat until it starts to boil.
4. Add the beans and cook until warm.
5. Add the milk and just cook until thoroughly heated.
6. Stir in the sausage and the kale, let all heat through and serve. Delicious!
