Ingredients

4 red bell peppers
2 bags SteamFresh brown rice
1 large egg
1 14.5 oz can pinto beans
1 14.5 oz can black beans
1 14.5 oz can lentils
1 14.5 oz can diced tomatoes
1 27,5 oz can tomato sauce
1/2 cup shredded cheddar cheese
Pinch of Italian Seasoning
Directions
Preheat oven to 350 degrees.
Mix together cooked rice, egg, pinto beans, black beans, lentils, diced tomatoes and 1/4 of the tomato sauce in a mixing bowl. Add a little Italian Seasoning.
Cut the tops off the peppers and remove seeds. Place them in boiling water for 5 minutes to soften. Remove and place in a baking dish.
Stuff peppers with bean mixture. Any extra mixture can be spooned around the peppers. Pour the remaining tomato sauce over the peppers. Sprinkle each pepper with cheddar cheese.
Place in oven and bake for 1 hour.
