Ingredients

    1 1/2 lbs skinless, boneless chicken breast Cubed
    3T Olive oil
    1 lg. onion coarsely chopped
    2t. salt
    1/2 t. pepper
    4 stalks of celery
    4 carrots
    4 gloves of garlic
    5 c. water
    1 C brown rice
    2 t. thyme
    1 1/2 t. sweet basil
    1 T parsley
    2 lbs. broccoli
    3 cayenne peppers
    2 t. cumin

Tips

Could use more spices.


Directions

Brown chicken in olive oil. Add onions, celery and salt, pepper and garlic. Add water, rice, and carrots. Bring to boil, then simmer for 30 minutes. Add Broccoli and spices. Serve with bread and corn on the cob and salad.
