I made this with Bob's Red Mill Gluten-Free Rolled Oats to make it certified Gluten-Free. This recipe can be altered to fit your favorites, and is great for breakfast with a dollop of greek yogurt. Ingredients

    2 cups of Bob's Red Mill Gluten-Free Rolled Oats;
    4 medium ripened bananas;
    1 tsp vanilla extract;
    2 tsp ground cinnamon;
    2 tbsp light or amber agave nectar (can also use sweetner like splenda or maple syrup);
    1 cup milk (can use non-fat, soy, or almond milk if desired);
    1/4 tsp of salt;
    1 tsp baking powder;
    2 tbsp almond butter (or another nut butter or oil);
    2 medium eggs (optional);
    1/4 cup chopped pecans (optional);
    1 cup chopped apples (optional).

Tips

This recipe is gluten free and can be made vegan by substituting the milk for soy or almond milk and skipping the eggs. You can also sub the ripened bananas for applesauce or canned pumpkin. You can add a little nutmeg to compliment the pumpkin, if used. You can trade the apples for berries or raisins. You can skip the almond butter and substitute another favorite nut butter or a couple tbsp of oil. You can substitute the pecans for another type of nut or nix them altogether. You can also sprinkle brown sugar on top to make it nice and crispy. There are a multitude of possibilities!


Directions

Mash bananas and combine with vanilla, cinnamon, agave nectar, milk, salt, baking powder, almond butter, and eggs. Mix well. Add oats, pecans, and apples. Spray 8x8 square baking dish (you can also use a bread/meatloaf pan or even a muffin pan-alter baking time as needed) with cooking spray and pour in mixture. Bake at 375 degrees for approximately 45 minutes or until top is golden brown and/or oats have set.
