Introduction

This is a great recipe to have with a bbq. You can play with the ingredient portions to suit your own tastes. This is a great recipe to have with a bbq. You can play with the ingredient portions to suit your own tastes.
Number of Servings: 8

Ingredients

    Quarter of a Pumpkin - cut into 1" chunks and baked
    1 medium Onion - diced
    1 packet of fresh baby spinach - washed
    Handful of sun or sem-dried tomatoes
    2 cloves garlic
    Handful of toasted pine nuts
    Feta cheese - 100 grams or so and cubed
    2 tbsp Olive Oil

Directions

Heat oil in largish frypan over medium to high heat.

Add onions and garlic and sautee till clear.

Add tomatoes and pumpkin and sautee a further few minutes.

Add feta, pine nuts and half the spinach and stir until spinach wilts.

Turn off heat and then add remaining spinach and stir through (this is so that you have some leafy spinach as well as some well cooked spinach in the dish but it doesn't really matter if it all wilts).

Serve from platter as opposed to in a bowl.

Makes around 6 - 8 side servings.

    Very Good
    This will be my new party piece! I added some vegetable salt to the pumpkin and a couple of fresh tomatoes, and the result was excellent. - 10/13/09
