Ingredients
-
1 lb lean ground turkey
1 egg
1/2 c. oats (I used quick cook)
4 tsp Wildtree Chipotle Lime Rub
1/2 large green pepper, chopped
1/2 large red pepper, chopped
1/2 large yellow onion, chopped
1-2 carrots, shredded
2 tablespoons of Wildtree grapeseed oil (I used bacon flavor, which is vegetarian)
Tips
For portion control, I made 5 mini loaves in mini loaf pans.
Directions
Preheat oven to 350 degrees. Heat the olive oil in a pan at medium heat until hot. Add the garlic, onion, peppers, and carrots. Saute until fragrant about 10 minutes. Set aside to cool. In large bowl, mix together the ground turkey, egg, oats, and rub. This is where you can experiment, so depending on how healthy you want the meatloaf to be... you have a few options: more salt, ketchup, fat-free French salad dressing, tomato sauce, Parmesan cheese, etc. Add in the vegetables and get messy! Mix everything so that the mixture is consistent throughout. Spray a 13" x 9" baking pan with fat-free cooking spray. Form the mixture into a loaf shape in the middle of the pan and bake for 45-50 minutes at 350 degrees.
