Introduction

This is a recipe that was taken from several that I found but made some adjustments to make it my own. It is low-fat and low-carb especially since I subbed the sugar with Equal. It is a sweet treat when I get cravings for something familiar that I can no longer have as a diabetic-cheesecake! Ingredients

    1/3 cup of butter
    3/4 cup of finely crushed graham crackers
    1/2 cup of flour
    1/2 cup of flaked coconut
    1/2 cup ground pecan
    1 tsp. cinnamon
    3/4 cup of Equal (separated into 1/4 & 1/2 cups)
    1 1/2 8-oz packages or reduced fat cream cheese or Neufchatel, softenend
    1 cup of egg beaters or 4 eggs.
    1.5 tsp vanilla
    2 cups Fresh Blueberries

Tips

Baking time will need to be separated. 8-10 for prebaking crust and then an additional 18-20 to finish cooking time.


Directions

1)Preheat oven to 350. Grease a 13x9 pan. Heat 1/3 cup of butter in a sauce pan until it just begins to brown, set aside.
2) In a bowl, mix crushed graham crackers, flour,cinnamon, coconut, ground pecans (pre grind in a food processor (to equal 1/2 cup), and 1/4 cup of Equal. Mix. Add melted butter and toss until coated. Press mixture into bottom of pan. Prebake crust for 8-10 minutes.
3) In a mixing bowl beat cream cheese with remaining 1/2 cup fo Equal. Mix in eggs and vanilla until combined. Pour over hot crust and sprinkle with blueberries.
4) Bake fro 18-20 minutes or until set in the center. Cool then chill in fridge for 3 hours.

Serving Size: makes 32 squares
