Introduction

A rich slow cooked bolognese A rich slow cooked bolognese
Number of Servings: 10

Ingredients

    350g lean beef mince
    350g minced Pork
    6 medium carrots
    2 medium white onions, chopped
    1.5 medium red onions, chopped
5 cloves of garlic, finely chopped
    250 ml Red Wine
    500g Passata

Tips

Good additions: finely chopped chicken liver and pancetta. Based on a recipe by Delia Smith.

Directions

First brown the meat in small portions in a frying pan (tasty, tasty Maillard reactions) add each portion to a pre-heated slow cooker. Next (in the same pan) fry the garlic and onions until soft and beginning to brown. Add these, along with the carrots and passata to the slow cooker. Deglaze the pan with the wine (remember to scrape any burnt crispy bits free) and add to the slow cooker. Add the remaining wine to the slow cooker and leave the house, the smell will haunt you until time to eat.
