Introduction

This recipe includes several wonderful summer favorites; sweet corn, summer squash, ricotta, cherry tomatoes, almonds, and fresh mint, for a delicious, hearty, healthy, light summer meal. Adapted from Cooking Light. Makes 4 heaping cup servings as a main dish, or several smaller servings if serving as a side dish. Ingredients

    1 cup dry Quinoa
    2 cobs fresh Sweet Corn, about 1.33 cup
    1 cup shredded Yellow Summer Squash
    1/4 cup sliced Almonds
    1/4 cup Ricotta, Part Skim
    6 Cherry Tomatoes, sliced
    2Tbs. chopped fresh mint

Tips

We have some chocolate mint, that has a slight chocolate taste to it which really adds a wonderful flavor to this dish.


Directions

Cook corn about 20 minutes, and cool in ice water.

Cook quinoa about 15 minutes, drain and cool.

Slice tomatoes, chop mint, and shred summer squash. Remove corn from cob, combine ingredients, chill before serving.
