Introduction

So, it's been awhile since I went grocery shopping, tonight I didn't have many options for dinner, so I made this up based on what I had in my kitchen. And it was good! might have too much fat for some, because of the sesame oil. So, it's been awhile since I went grocery shopping, tonight I didn't have many options for dinner, so I made this up based on what I had in my kitchen. Ingredients

    1 pkg Steamfresh frozen brown rice (10 oz pkg)

    .75 cup shredded carrots

    .25 cup sliced almonds

    1 tbsp sesame oil

    salt, to taste (calculated with .5 tsp)

    cinammon, to taste

Directions

microwave rice according to instructions. While rice is cooking, heat sesame oil in a non-stick pan on medium heat. Add shredded carrots, cook for about 1 min. Add shredded almonds, cook until rice is ready. Add rice, cook, stirring frequently, until heated throughout, about 2-3 more minutes. (rice should already be hot). Add salt and cinnamon to taste before serving. Would be good with chicken or tofu.

Serving Size: makes 3 1 cup servings
