Ingredients

    1 chicken breast
    2 tbs olive/canola oil blend
    1/2 cup crushed saltine crackers
    1 medium egg

Tips

My kids love to dunk these in apple sauce. The ingredients in the cracker crumbs are enough to crisp the chicken strips and keep middle moist.


Directions

Cut chicken breast into 6 strips, dip into egg, cover with cracker crumbs (can also use a little flour). Add olive/canola oil to pan and heat until bubbles appear. Add chicken to pan and cook 3-5 minutes on each side. Place on paper towel to absorb extra oil.

Serving Size: makes 6 strips (3 strips per serving)
