Introduction

This is a fabulous unique refreshing summer salsa my daughter-in-law created last weekend. It is crunchy fresh, with a smoky spiciness and an unexpected sweetness. So different and delicious. Ingredients

    Cucumber - use medium size unless you want the cucumber taste to dominate; then large.

    Honeydew melon - any will do; you want to have at least twice as much melon by volume as cucumber ( Publix has the King o' West melons in season now and they are perfect for this recipe).

    Use fresh ground black pepper to taste, not a fixed measure.

    Use Ground Cumin to taste. Start with small amts as the flavor is strong and add until you like it.

Directions

Peel cucumbers, remove the seeds and dice into a small salsa size dice. Do the same for the honeydew melon. You should have about a 2 to 1 ratio of melon to cucumber. Finely chop a RED ONION and add to the mixture ( here again the amt and size of the onion is up to your taste). Add fresh ground Black pepper to taste. Add Ground Cumin to taste ( start with small amts and taste as you go. Finish with the fresh juice of 2 limes, mix well, cover, and refrigerate for a few hours to let the flavors blend. Enjoy with chips, or as a relish!

Serving Size: Should make approx 8 cups ( you can use just one cucumber and half a melon if you want a smaller amt)
