Introduction

I use different vegetables each time and sometimes top with dairy-free tofutti sour cream alternative and/or avocado. I use different vegetables each time and sometimes top with dairy-free tofutti sour cream alternative and/or avocado.

Ingredients

    tortilla chips
    refried beans
    any veggies (onion, jalapenos, onion, black olives, mushrooms)
    salsa or taco sauce
    Cheese or dairy free cheese alternatives
    (optional) sour cream or guacamole)

Directions

Layer tortilla chips, drop bits of refried beans onto chips, sprinkle on any vegetables, salsa and cheese. Microwave for up to 2 minutes (if you have a high wattage microwave watch so cheese doesn't brown) long enough for cheese to melt. When done top with sour cream and/or guacamole.

Serving Size: makes one serving if dinner or multiple servings if an appetizer
