Introduction
This meal combines chicken curry with the deliciousness of noodles. Rinse the Shirataki noodles thoroughly before using and squeeze out the excess water. I use the Angel Hair kind. Ingredients

6 oz Chicken Breast
1 Cup sliced onion
1 Cup cherry tomatoes, sliced in half
Tofu shirataki noodles - angel hair style, 1 package
1 tbs curry powder
2 tsp ground ginger
2 TBS soy sauce
2 TBS rice wine vinegar
1 tsp sesame oil
2 TBS half and half
Tips
You can use low sodium soy sauce if you want. Also, you could omit the sesame oil if you want to lower the fat content, I think it would still taste good.
Directions
In a nonstick skillet saute onion, tomato, and chicken together.
Add curry powder and ground ginger to skillet. Cook for about 3 minutes.
Add sesame oil, soy sauce, and vinegar. Stir well and simmer for about a minute.
Next, add the rinsed and drained Shirataki noodles. Stir the noodles around with a fork to help separate them and incorporate them into the sauce. Simmer for 5-10 minutes or until chicken is cooked through.
Finally, add the half and half and stir well.
Serving Size: Makes 1 - 2 servings
