Introduction

Ingredients

1 c. Sugar
1/2 c. Butter (unsalted)
2 Eggs
1/4 tsp. Salt
1 tsp. Baking Soda
1 c. Mashed Bananas
1/2 tsp. Vanilla
1/2 c. Sour Cream, Reduced Fat
1/2 c. Chopped Nuts (optional, not included in nutrition info.)
Directions
1. Melt butter in the microwave.
2. Cream butter and sugar together in a medium bowl.
3. Beat in eggs.
4. Beat in dry ingredients.
5. Beat in bananas, sour cream, and vanilla.
6. Drop spoonfuls of batter into muffin cups in a muffin tin.
7. Bake in a 350° oven for 15-20 minutes, or until a toothpick inserted in the middle of a muffin comes out clean. (If baking in a loaf pan, increase baking time to 50-55 minutes)
