Introduction
This is a quick and simple recipe I use for helping me loose weight and eat right. Most people won't try it because it is "SQUASH." But it don't taste like squash!I can't say it's Mexican, but I like the spicy Mexican salsa flavor. This is a quick and simple recipe I use for helping me loose weight and eat right. Ingredients

4-5 LBS (UNCOOKED WEIGHT) SPAGHETTI SQUASH
2-3 LBS BONELESS SKINLESS CHICKEN TENDERS
16 OZ PICO DE GALLO OR FRESH GARDEN SALSA
4 TBSP CHUNKY SALSA
1 CUP SHREDDED MEXICAN 2% FOUR CHEESE BLEND
NO STICK COOKING SPRAY
Tips
For added spiciness us a hotter salsa or add cayenne pepper.
Store leftovers in the refrigerator. Reheat in the microwave.
Directions
I prefer to cut the squash length wise, remove the seeds pulp before I cook it. Place the cut squash face down on a microwave cooking sheet and cook 4 minutes per pound. You may use your own cooking method if you prefer.
Spray a 9x13 inch casserole dish with cooking spray.
Scrape the squash strands out of the shell and place them in the casserole dish. I use a large fork and go from side to side when removing the strands.
mix the pico de gallo and salsa together (now would be the time to decide if you want more spice or spiciness) and pour half of it into the squash and mix well (MORE LIKE USE TWO FORKS AND TOSS IT IN). Spread the squash out evenly.
Lay the uncooked chicken tenders on top of the squash covering all or most of the squash.
Spread the remaining salsa over the chicken.
Bake at 350 for 40 minutes or until the chicken is cooked.
(Regular chicken breasts take much longer.)
remove the casserole from the oven
CAUTION, IT IS HOT!
Spread the cheese evenly on top of the chicken, put it back in the oven for 10 minutes
It ready when the cheese is well melted and bubbly.
