Ingredients

    1 Cup plain Greek-style Yogurt
    1 Cup 1% low-fat Buttermilk
    1 medium ripe Avocado
    1 large fresh Zucchini
    3 Cups fresh Spinach
    1-1/2 tsp. fresh Lemon Juice
    1/2 tsp. Onion Powder
    1/4 tsp. Garlic Powder
    2 tsp. Turbinado Sugar


Directions

Finely blend the zucchini and spinach in a food processor. Then add the avocado, lemon juice, yogurt and buttermilk and blend all together. Whisk in the spices and sugar, add salt and pepper to taste. Makes approximately 1 quart of dressing.

Serving Size: Makes 32 2 Tbsp. servings
