Ingredients

    8 French trimmed Lamb Loin cutlets
    1 cup fresh Wholewheat breadcrumbs
    2 servings Onion Cup of Soup (Lipton Onion and Mushroom USA, Continental French Onion Aust)
    1 tsp dried Rosemary
    2 tsp grated Orange peel
    1/4 cup plain white flour
    1 small egg beaten with 2 Tblsp nonfat milk

Directions

Mix the breadcrumbs with the cup of soup, rosemary and orange peel.
Dust the cutlets with flour, dip in beaten egg and milk then into the crumbs.
Place on a greased oven tray, spray lightly with canola spray, and bake at 350 deg F (180 deg C) for approx 30 minutes, turning half way.

    If I was not gluten free, I would make changes, including not using any premade onion soup product. I'm sure it likely tastes good, but prefer a totally clean eats kind of recipe. - 3/25/11
