Introduction

In the slow cooker or on the stove, easy, fast & healthy. I use my own concoction of Taco Seasoning or the low sodium packets if I am feeling uber lazy about mixing my own.. This is one meal that never leaves me feeling deprived.

Serve with a sprinkle of shredded cheese or some crunchy tortilla chips. A real husband pleaser.

Ingredients

    1 LB Ground Beef, Lean 93% (turkey works great too!)
    Taco Seasoning (if using a packet about 1/4 of it or to taste)
    3/4 C Water
    1 Can Chili Beans, 50% Less Sodium
    1 Can Corn Niblets, no salt added
    1 Can Diced tomatoes in tomato juice

Tips

I don't like a lot of spice, so use the taco seasoning to your own preference. This recipe is easily doubled and I actually cut it down to a 1/4 of the original. My mother makes this and freezes it in single serving portions to whip out of the freezer when she's hungry but no time to cook, just to stay on track. Thanks for the recipe, mom!


Directions

Cook beef or turkey, drain. Mix all ingredients in your slow cooker and simmer on low/med for 1 - 2 hours.

Stove top: Simmer on low/med heat until heated through, stirring occasionally.
