Introduction

My favorite couscous salad. My favorite couscous salad.
Number of Servings: 3

Ingredients

    1/3 cup dry couscous
    1/2 cup diced tomatoes
    1/2 cup diced green peppers
    1/2 cup diced red onions
    1/2 cup chopped carrots
    1 cup water
    1 tbl coconut oil
    1/2 tbl chopped garlic (about 3 cloves)
    1/2 tbl salt

Tips

Use as many organic ingredients as possible. Feel free to add more non-starchy vegetables.


Directions

Bring water, salt, and coconut oil to boil. Remove from heat, and then stir in couscous. Place lid on pot and let sit for 10 minutes. Dice tomatoes, red onions, green peppers, carrots, garlic, and mushrooms. When couscous is cool, stir in all vegetables and garlic. Serve cold or at room temperature.
